Meats Balls

Ingredients:
1 lb. grass-fed organic ground beef
1/4 lb. Italian sausage
1 egg
1 cup water
1 zucchini
2 yellow squash
1/2 onion
5-7 mushrooms
1 jar marinara sauce
2 tbsp olive oil
1 tbsp coconut oil (optional)
Italian seasoning:  I mix minced garlic, oregano, cumin, pepper, cayenne pepper, and parsley

Instructions:

1)  Mix the meat, 1 egg, Italian seasoning, and 1 cup water in a large boil.

2)  Heat a large skillet with olive oil.  Heat jar of marinara sauce in separate large pot.

3)  Roll meat into desired size meatballs and place into skillet, leaving enough room to roll the meatballs around in the pan until fully cooked (this usually requires cooking the meatballs in 2-3 batches)

4)  While the meatballs are cooking, cube zucchini, squash, onion, and mushrooms.  Place the veggies in a separate skillet and cook (in coconut oil if you so choose) until tender.

5)  Place cooked meatballs in simmering marinara sauce.

6)  Add veggies to marinara sauce and meatballs.

7)  Allow all ingredients to simmer in pot approximately 15 minutes before serving.

8) Enjoy!
